Exploring Italy’s Culinary Traditions with Chef Nic

Hailing from Sydney, Australia, Chef Nicholas de Gersigny brings a rich blend of heritage, passion, and culinary expertise to Valentina's kitchen. With Italian roots from his grandmother, Chef Nic’s love for Italian cuisine blossomed early on, but it was his experience in the south of Italy that truly shaped his culinary journey. In 2008, he embarked on a life-changing adventure, spending three months travelling along the Amalfi Coast, exploring the culinary landscapes of Sardinia, Genoa, and Porto Cervo while working aboard a private yacht. This experience allowed him to connect deeply with Italy’s rich culinary traditions, learning about regional ingredients and authentic cooking techniques firsthand.

Inspired by these authentic flavours and his own family heritage, Chef Nic returned to Australia with a renewed sense of purpose. He spent five years mastering Italian culinary techniques in some of the country’s most esteemed Italian restaurants, perfecting his skills and developing his own signature approach that honours tradition while embracing creativity.

Now, as the Head Chef at Valentina, Chef Nic brings his passion and expertise to every dish. His commitment to using the finest ingredients, combined with his dedication to authenticity, ensures that every meal showcases Italy's vibrant culinary heritage.
